Manual harvest and sorting, aging in oak barrels (demi-muids) for 10 months.
Cherry red color with ruby red reflections. The nose evokes notes of raspberry, blackcurrant, liquorice, with scents of violets. The palate is fleshy with crunchy tannins. The fresh and salty finish is accompanied by aromas of licorice and pepper.
Its fruity frankness, its spicy aromas call for fine charcuterie, white meat with spicy juice, roasted poultry, grilled red meat, mushroom omelet, beef stew and fresh pasta, veal kidneys. The Mont d'Or, Saint-Nectaire, Reblochon and Époisses will also be promoted.
